Why do religious people believe in an infinite soul and can't fathom an infinite universe?

I think it's simply a shortcoming of human cognitive capacity. People can easily imagine time stretching on forever but have a much more difficult time imagining the universe extending infinitely in space and possibly including infinite amounts of stuff, or there being infinitely many universes.
